The final cost of your beef is determined by the actual hanging weight of the animal.

Once your animal has been harvested and weighed, you will receive an invoice for the remaining balance. Your deposit will be applied toward the final amount due.
Because every animal is unique, final hanging weights and costs will vary.

What Is Hanging Weight?
Hanging weight is the weight of the carcass after harvest and before it is processed into individual cuts.
Our pricing is based on hanging weight, which is the industry standard when purchasing whole or half beef.
Typically:

Hanging weight is approximately 50–60% of live weight.

Packaged take-home beef averages 55–65% of hanging weight, depending on your cutting instructions and whether you choose bone-in or boneless cuts.
At Winters Ranch, you are only charged for the actual hanging weight of your animal.
The Winters Ranch Beef Process
1. We Handle Transportation
We transport your animal to the butcher, so there is nothing extra for you to coordinate.
2. Hanging Weight & Custom Cut Sheet
Once the carcass is weighed, we calculate your final balance and send you cutting instructions so you can customize your order.
Beef Processing & Delivery Information – Winters Ranch Meats INC
The customer is responsible for paying Wiley Processing directly for both processing and butchering. Payment must be made prior to picking up your beef.
Once your beef is finished, we will arrange FREE home delivery or FREE pickup at Winters Ranch, whichever you prefer.
Beef requires approximately 18-21 days of dry aging to ensure quality, tenderness, and flavor. Once your order is ready, we will contact you to schedule delivery or pickup.

3. Dry Aging
Your beef is dry-aged for approximately 21 days to maximize tenderness and flavor.

We coordinate pickup at the butcher or schedule home delivery so your beef arrives ready for your freezer.
