The bar is your share of one animal by weight. The freezer shows roughly how much space it takes in a 24 cu ft upright.
Rush, Colorado
Two years on grass. Twenty-one days dry-aged. Never penned.
How it works
Step 1
Put down a deposit and we'll set aside an animal for you. We'll email you the anticipated butcher date.
Step 2
After processing we weigh the beef and you tell us how you want it cut. We'll help. It's easier than it sounds.
Step 3
You get a final invoice based on hanging weight, then pick up at the ranch or we deliver free.
Hanging weight is about 50–60% of live weight. What ends up in your freezer is about 55–65% of hanging weight, depending on how you have it cut. We price on hanging weight so nobody pays for what they don't take home.

Our ranch
Our family has raised cattle on the open plains of eastern Colorado since 1952. We do things the right way, not the fast way. Two years to raise an animal, no hormones, no antibiotics, and no pens. Our cattle graze every day of their lives, right up to butcher day.
We're not USDA Certified Organic, and we'll tell you exactly why. We'd rather show you how we work than hand you a badge.

We split a half with my sister. The invoice matched what they told us on the phone, to the dollar.

They walked me through the cut sheet twice. First time I've ever understood what I was ordering.

A quarter filled half our chest freezer, exactly like the chart said. The ground beef is a different thing entirely.

Your cut sheet
Thicker steaks. Bigger roasts. More burger. Bones for stock, or not. With a half or whole you choose every cut, and we'll walk you through the sheet. It's easier than it sounds.
Here's a real sheet from a half beef, filled in. The highlighted option in each row is what that family chose.
Nothing here is locked in until we call you. Change your mind any time before butcher day.
