1/2 Beef Side

Reserve your 1/2 beef today by selecting your preferred butcher date and placing a deposit. Your beef will be dry-aged for approximately 18–21 days after processing to maximize tenderness and flavor before being cut and packaged to your specifications.

Pricing

$10.50 per pound hanging weight

  • Average hanging weight: 200–350 lbs

  • Estimated total cost: $2,500–$3,800 depending on the size of the animal

  • Plus butcher processing fees

  • $900 non-refundable deposit required to reserve your beef

Your deposit will be credited toward your final balance. Once your animal has been harvested and weighed, we will send you an invoice based on the actual hanging weight.

Because every animal is different, final weights and costs will vary.

Freezer Space & Family Size

A half beef is ideal for:

  • Families of 2–6 people

  • Customers who want to stock their freezer for months

  • Approximately 120–220 lbs of take-home beef

Plan on using approximately 50% of a 24 cubic foot upright freezer.

Pickup & Delivery

  • Pick up directly from the butcher

  • Home delivery available for an additional fee

Butcher Fees

Customers pay butcher processing fees directly to the butcher. Processing charges typically include:

  • Harvest fee

  • Cut and wrap fee

  • Packaging materials

  • Disposal and handling fees

Processing costs vary by butcher and hanging weight.

How Payment Works

  1. Place your $360 deposit to reserve your beef.

  2. Your animal is harvested on the selected butcher date.

  3. The carcass is weighed and the hanging weight is determined. You get your deposit back when we charge for hanging weight. 

  4. Your final invoice is calculated based on hanging weight at $10.50/lb.

  5. Your deposit is applied toward the final balance.

  6. The butcher contacts you regarding cutting instructions.

  7. After dry aging and processing, your beef is ready for pickup or delivery.

What Is Hanging Weight?

Hanging weight is the weight of the beef carcass after harvest and before final processing into individual cuts.

Our pricing is based on hanging weight because it is the industry standard for purchasing whole and half beef.

Typically:


  • Take-home meat averages 60–65% of hanging weight, depending on your cutting instructions.

For example, a 300 lb hanging weight half beef may yield approximately 180–195 lbs of packaged beef.

At Winters Ranch, you are charged based on the actual hanging weight of your animal.
